Homaro Cantu Obituary

CHICAGO (AP) - Chef Homaro Cantu, who artfully blended science and fine dining at his Michelin-starred Chicago restaurant, has died.

The 38-year-old Cantu, one of Chicago's most renowned chefs, turned cooking into alchemy through his playful and surprising brand of molecular gastronomy at Moto, the restaurant he led in the city's West Loop. Customers dined on edible menus, carbonated fruit and a fish preparation that cooked in a tabletop polymer box, among other foods.

His kitchen featured a centrifuge and a hand-held ion particle gun. His menus offered up items with intriguing titles such as "surf and turf with mc escher" and "after christmas sale on christmas trees." And he dreamed up fantastical propositions for everything from alleviating hunger with air-dropped edible leaflets to delivering food to astronauts on Mars.

Describing himself as a scientist at heart, Cantu was untroubled by questions about whether his creations were more science project or true fine cuisine.

"This is fun. I don't care what it winds up being, as long as it's fun," Cantu told The Associated Press in a 2006 interview.

Cantu's body was found Tuesday in a building on the Northwest Side where he had planned to open a brewery by this summer. The Cook County medical examiner's office confirmed the death but did not release a cause. Authorities did not say his death was suspicious.

Cantu grew up in Portland, Oregon, and graduated from Le Cordon Bleu. He worked in nearly 50 kitchens on the West Coast and then moved to Chicago, where he spent four years working for famed chef Charlie Trotter, eventually rising to the position of sous chef before leaving to open Moto. Trotter died in 2013.

Cantu built a state of the art indoor farm to grow vegetables - complete with a vortex aerator - inside what used to be Moto's office. He claimed to be the first chef to zap food with a class IV laser. And he preached the virtues of the West African miracle berry for sweetening food and eliminating the need to use sugar or artificial sweeteners.

In moments of reflection about his work, he could veer into the philosophical and once acknowledged in an interview about his edible replications of food that he wasn't always sure what was real and what wasn't.

"There's a fine line between real and synthetic," he told the AP in 2006. "Real is something that occurs in nature. Synthetic is something that does not. But what if you recreate something on a molecular level that's exact to something that's real? Does it become synthetic, or is it real?"

My deepest heartfelt sympathies to you Katie and your beautiful girls. I first met Omar when we worked at Trotters together. He was such an amazing, talented Chef and individual. I wish I would have told him how much he had impacted me and my career. I looked up to him more than he could have known. Although I hadn't seen him in quite some time, throughout the years, we kept in touch and I followed his amazing accomplishments. I would see him on TV or on the cover of the latest edition of whatever food magazine, and I was so proud that I could say I worked with him! I have such fond memories of getting together with my Trotter alums at Moto when in town for the NRA show- I can still taste some of the amazing courses I experienced at Moto and Otom when I lived in Chicago. He had such a positive impact on the culinary world, and the world as a whole. A generous, kind soul who made you feel important, like you mattered and made a difference, like you could accomplish anything you put your mind to. My heart has been heavy since I heard the news. I know Omar's legacy will live on through us all. Rest in paradise, my friend.

Omar, I remember this young man I met when he graduated culinary school with my son Andrew, I am not sure if he was 17 or 18 at the time but he was so very young. These two young men were already bonded. And so it began. He was an an inspiration to many even then including my son . They were , even then trying out always the craziest things, and would work/play on these into early morning hours. I just loved how these two had such a strong brother-friend relationship. It never ended, it just became stronger. Omar was destined for greatness even then. The passion he had was infectious. But the great heart he had for humanity was something else. He always seemed so much wiser than his age, Oh so young....always driven to make this a better world, he never thought of himself first, just others. I loved you Omar. How painful this loss is to not only to the world, to my son, myself, but first and always the three girls in his life...Katie, Ella, and Gracie....his spirit will always be watching over you in the Moon Above. Homaro Cantu, what an innovator, what an inspiring chef, who creatively targetted issues related to healthy cuisine and world hunger, by exploring the intersection of the synthetic vs artificial. What Homaro accomplished, reminds me of what a generous and loving God we have, who gave mankind among many things, all the vegetation and food on earth today(genesis 1:29,30). Homaro always referenced methods of turning local vegetation in your own backyard, into full meals which could have profound implications for people living in third world countries who wouldn't have to go hungry. It reminds me of another wonderful provision from God, that promises a time in the near future when people will " build houses and live in them, they will plant vineyards and eat them..." (Isaiah 65:21,22). We look forward to this promise and hope from God. My deepest symapthy to Homaro's family, the world has lost a creative man.

He was my hero, he was my inspiration to become a chef, I've been following his actions since before he even opened MOTO, being only 21 now, I spoke with him via YouTube and Facebook and all I've wanted since I was 12 was to work with him and learn from him.
